Tetra Pak's vice president of marketing, Libby Costin believes that a key trend impacting the dairy industry is the desire for consumers to have a closer connection to their food. Costin said: "I think consumers are interested in where their food comes from. The process from farm to plate and where ingredients is from as well. This is one thing the industry will need to think about."

Organic infant nutrition is a growing consumer demand. To meet this, FrieslandCampina has launched an organic vivinal GOS syrup, which the company sees as an important addition to organic infant formula. GOS, otherwise known as Galacto-oligosaccharides is a prebiotic and is an organic dairy ingredient rich from organic-certified lactose using a proprietary enzymatic technology. Diana Foods' Stephanie Pretesacque spoke about the company's new BetaPulse health solution, using red beet juice standardised in natural potassium to improve cardiovascular health. When formulating BetaPulse, Diana Foods were able to standardise the concentration of potassium at 2.4%. The company uses a soft manufacturing process which allows the chance to keep intact other key elements such as natural nitric oxide precursors, betain and polyphenols.
