Marialuisa Ferro head of Gryö UK talks about using alternative less expensive proteins such as flour made from edible insects such as crickets. The company’s dried fruit bars are nutrient dense and importantly taste good with flavours such as dark chocolate and pistachio, apricot and thyme and ginger and fig. Manufactured in Loir et Cher and supported by the Food Val de Loire agrifood cluste in southern France, they already have won over a number of gourmets and now have an eye on the export market. |

In 10 short years, Daniel had not only created and established a healthy snack bar category, but had built a $1bn business - taking America by storm. Kinomi, the term for nuts in Japanese, is a range of flavoured roasted nuts created by Hiromi Stone who was born in Japan but raised overseas. Hiromi uses a base coating of Japanese flavours such as soya sauce, sake and kombu. Claire Phoenix spoke with Hiromi about the product including where the nuts and almonds are sourced from and their choice of packaging. |

Atlantic Rain was set up to take advantage of the current gap in the European market of no companies producing potable bottled rainwater. Feeling there was an opportunity to exploit Ireland’s geographical position, where Atlantic fronts can bring in as much as 60 inches of rain to the west or Ireland per annum, to produce a unique product that uses this natural and abundant resource.
Atlantic Rain plans to produce still and sparkling versions in bespoke 750 and 250ml glass bottles and market it as a premium product. Company director Paul O'Flynn spoke with Claire Phoenix at the Zenith Springboard event to find out more.
